Never ending sweet tooth!

I love sweets! There. Its out! Not too long ago a fews of my friends started altering their diets through a bible based diet system called Prism. My curiosity got the better of me and I decided to give some of the alterations a try....Ive replaced granulated sugar with cane juice sugar, and although I have not cut enriched flour out of my diet completely, I have cut it way way back. This limits alot of what and where I can eat that is for sure. The problem is I love goodies- candy, cookies, cake, pie, ice cream...the list goes on and on with me! Today I visited a neat site called Cooks.com and found a not so bad recipe for banana muffins and I want to share it. The change to cane juice sugar, has over time changed my taste buds a bit so this recipe, not too sweet...and satisfied my sweet tooth...if you give it a try, I hope you enjoy it as much as I am!

Whole Wheat Banana Muffins
1/2 C Butter, softened
1 C sugar ( I used 3/4 C cane juice sugar)
2 eggs, beaten
3 medium bananas, mashed (the darker the skin the sweeter the banana!)
1 1/2 C whole wheat flour
1/2 t. baking soda

Combine butter and sugar, beat until light and fluffy. Add eggs and beat well. Stir in bananas. Combine flour and baking soda. Add to creamed mixture, stiring just enough to moisten the dry ingredients.
Fill muffin cups 2/3 full. Bake at 350 degrees for 30 min or until done (test w/toothpick)
Yield: about 15 muffin

ENJOY!!!

Id rather be scrappin!

This had been a truly crazy week so far...and I havent even made it to Friday...Sunday I received a call that my Dad is going to be going into open heart surgery- and we still do not have a definite date. We have known since the end of April that the surgery is no longer avoidable. My dad who is 72 years old, in pretty decent health, now has more tests to undergo because in doing all the pre surgery testing a mass was found in each of his lungs...I was scheduled for jury duty here at home a day after his tenative surgery date, my brother Marcus, is recovering from surgery for a deviated septum, and my older brother tore ligaments in his ankle while playing basketball over the weekend...My friends father has also undergone surgery recently, and, because when it rains in this sense it must pour apparently, I now have no idea when my dads surgery will actually take place. Because God truly is Good, Im ok with it all. My older brother is in good spirits, (although his wife is less than pleased from what I understand) my younger brother can actually breathe now, and my friends dad seems to be doing ok, I didnt get excused from jury duty- but I did get to reschedule until July. My friend Ruthy will look after my boys, and I now know I will be able to be there with my dad no matter when the surgery is. Yes, God is Good... truly. So although I keep lookin at the current layout Ive been working on, and seeing that it is just where I left it-I have officially taken it off the mental list that I have where I hold myself accountable on the things I need to get done. Instead Ive taken the day off, given time to God, to praise Him, for the awesome things in my life even in the midst of so much uncertainty...and to do some things for my guys...because at the end of the day they are the daily blessings in my life...

Card Club

Im sorta funny when it comes to being creative....I think I do my best stuff when Im alone. Dont get me wrong, I love love love Craft Nites at Shelleys every Saturday... even my husband looks forward to kicking back with the other husbands that are there doing "man stuff"...watching a show or movie, etc...the women craft, talk, laugh, and talk some more...I love that. The thing is I dont get a whole lot done in the crafting department! So I have come to the thought that I have to go with a focused project on hand or well....I will just be there for the awesome company.
Anyway, Ruthy came up with starting our own card club- four cards a month, due by the last Saturday of the month (I threw that in for Shelley who works well under a deadline)...our count has now gone up to 5 a month, 6 if you want to keep one for yourself. After trying a different style, I worked on this one today. Inspired by Canadian Nickel Scrap'n I have decided on her easel card as my card selection for May! I just put one together so give it a try! Click HERE

Heres what the ladies will be getting from me...I love folded cards, and look forward to trying more in the future!
Thanks Canadian Nickel Scrap'n for the inspiration and video!
